It would be a great feature if you could have more than one person in the household, riding the software at the same time. Example, since this software needs a fairly sophisticated graphics card to run, these cards have dual screen output While having "sophisticated video card" never hurt...

Ok. The feature is released. By default Virtual Brake is on but you can disable it in Settings/Grade reduction/Virtual Brake

I am not sure I understand, can you please do a screenshot and post a link so I can see the problem. Also I would recommend you to try set font scaling options in Windows to 100%. I am using 4K screen myself and do not find anything out of order with the FUI.
